Mexican Pizza used to be one of my favorite things to order at Taco Bell. If you've been following me for awhile, you know I love to ketofy things so that I can still enjoy them. 🥰🙌

These tasted just like the real thing to me and my family LOVED them! I made half with refried beans for some of my family and the other half without. I did the calculations on the beans and if you ate one with the beans, it only adds on 1.6g carbs.

Without the beans, these are 5g net carbs. 🎉
*In case you wondered, I make chips out of all the leftover trimmings. Swipe to the last photo. :)
RECIPE:

1. Cut some circles out of your @cutdacarb flatbread. *See below for further details 👇

2. Fry them in a small amount of avocado oil on both sides until golden brown.

3. Drain on a paper towel.

4. Pre-heat oven to 400° and then lay half of the circles down on a parchment lined pan.

5. Top each one with taco meat (and refried beans if desired.)

6. Sprinkle on some shredded colby jack cheese and then add your 2nd layer of circles.

7. Top each one with 1 tbsp of taco sauce and some more cheese.

8. Bake at 400° for 5 minutes.

9. Once you remove them from the oven, add some chopped tomatoes, green onions, black olives and sour cream to each one.

*I folded my flatbread into fourths to help the process of cutting them out go quicker. After I had my first circle cut out, I used it as a sample and cut the rest with my kitchen shears.
