Welcome back y'all! It's THANKSGIVG TIME!!! This is Part 2 in our Thanksgiving series!
In this video I am converting a Pioneer Woman Dressing/Stuffing recipe to using bread we have made with freshly milled wheat.
The great thing about stuffing/dressing is you can put whatever you want in it. Hate rosemary? Leave it out. Want sage? Add it. Do whatever you like!
Once you have the bread made (which can be done a few days in advance), it's pretty easy to put together.

//Dressing Recipe:
1 Batch of Cornbread (https://grainsandgrit.com/cornbread-recipe/)
2 Loaves of French Bread (see recipe below)
1 Large Onion
5 Celery Stalks
1/2 bunch of fresh parsley OR 1 1/2 TB dried parsley
1/2 cup butter (1 stick)
6 cups chicken stock (make it yourself, or buy)
1/2 tsp dried basil
1/2 tsp dried thyme
1 TB dried rosemary
salt and pepper

2 cups warm water
1 TB yeast
2 1/2 tsps sugar
5-6 cups freshly milled hard white wheat
2 1/2 tsp salt

1) Combine yeast, water, and sugar. Stir and proof for about 5 minutes
2) Place yeast mixture in large bowl or mixer. Add 4 cups flour and the salt. Combine. Add flour until the dough starts just pulling away from sides of bowl (if using mixer). Once it starts pulling away from sides of bowl, knead for 9 minutes.
If kneading by hand, add flour until it's not sticking too much to hands. Wet hands and knead until dough is smooth and elastic.
3) After kneaded, turn dough out onto lightly floured surface. Divide dough in half
4) With each dough ball, roll out to about 9x15 inches. Start from the long side and roll dough tightly into a cylinder. Tuck ends under.
5) Slice each loaf about 3 times and place either on a French loaf pan or a parchment lined baking sheet.
6) Let rise until doubled about 30 minutes to an hour
7) Bake in preheated 400 degree F oven for 17-22 minutes until tops are golden brown. When you knock on it it should sound hollow.
8) Cool on baking rack before slicing

*Note* For a crispier crust, before baking whisk 1 egg white and 1 tsp of water and brush over loaves then bake
