Irish sourdough bread

Activating our sourdough
9 1/2 ounces or 1 cup sourdough starter
Or ounces or 1/2 cup lukewarm water 90°F
Ounces or 1 cup whole wheat flour

For your mashed potatoes
6 ounces or 3/4 cup water
One Tablespoon butter
1/4 Teaspoon salt
2.6 ounces or 1/3 cup warmed milk
5.2 ounces or 2/3 cup instant mashed potato flakes

For bread dough
5.2 ounces or 2/3 cup room temperature 75° bottled water or filtered water.
19 ounces or 2 cups active starter
12.34 ounces or 3 cups unbleached bread flour plus more as needed. I found I only needed 4 cups of flour for this recipe in total
10 ounces or 2 1/2 cups of whole grain whole wheat flour
One teaspoon fine sea salt
Olive oil or nonstick spray in a bowl
◦ And one ice cubes to put in a tray underneath the bread at while cooking
Heat oven at 425 and then reduce to 400 when you put the bread in.
