650 gr water at 90-95 F (32-35 C)
300 gr mature sourdough starter
1000 gr bread flour or unbleached all purpose flour
50 gr oil neutral flavored oil (canola, vegetable, sunflower, or avocado)
40 gr sugar or honey
20 gr kosher salt or fine sea salt
FOR A HALF BATCH (MAKES 1 LOAF)

325 gr water
150 gr mature sourdough starter
500 gr bread flour or unbleached all purpose flour
25 gr oil neutral flavored oil (canola, vegetable, sunflower, or avocado)
20 gr sugar or honey
10 gr kosher salt or fine sea salt
