In this episode of camp cooking on the wood stove, Jen serves up one of her favorite meals that she cooks on a regular basis- fish tacos! Watch and take notes as she takes you through the steps to make an easy, healthy, and delicious protein-packed family friendly dinner.

🌮Dr. Jenny's Family Friendly Fish Tacos Recipe🌮
(serves 4)
Ingredients:
1-2 tbsp extra virgin olive oil
1-1.5lb cod, mahi, or other white fish of choice like tilapia
1/2 onion chopped
1 red, orange, or yellow bell pepper sliced
15 oz (1 can) garbanzo/chickpeas and/or black beans
Corn or Flour tortillas and/or Tortilla Chips of choice

Seasonings:
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp Trader Joe's chili lime seasoning
1/2 tsp smoked paprika
1/2 tsp cumin
1/2 tsp Trader Joe's Everything but the Elote
1/2 tsp Trader Joe's 21 Seasoning Salute

Toppings:
1 avocado
1 roma tomato diced
1 lime quartered
1/4 cup shredded cheese of choice (white or yellow works well!)
1 cup Green Chile Salsa for topping
1/4 cup chopped cilantro or parsley

optional add-ins: jalapeño, bacon, fresh cilantro to top. HIGHLY recommend adding diced pineapple or mango in when cooking fish, let juices marinate fish as it cooks.

Directions:
1. Heat 1 tbsp oil in skillet over medium heat.
2. Saute onions, peppers for 5-6 minutes until onions are transluent. Add beans and seasonings ( 1/8 tsp salt, 1/4 tsp garlic powder, 1/4 tsp chili lime seasoning, 1/4 tsp 21 seasoning salute) let sauté for another 4-5 mins.
3. While veggies cook, season fish with remaining seasoning: salt, pepper, garlic powder, chili lime seasoning, smoked paprika, cumin, everything but the elote.
4. Remove veggies from skillet and set aside.
5. Add remaining oil in skillet.
6. Place seasoned fish in hot skillet. Sear for 4-5mins then flip and let cook for another 4-5 mins.
7. Heat tortillas while fish cooks.
8. Remove skillet & tortillas from heat and layer each taco with: fish, veggie mixture, tomato, avocado, cheese, parsley/cilantro, fresh squeezed lime juice, green chile salsa
