In this episode of camp cooking on the wood stove, Jen makes one of her go-to meals for an easy to make, protein packed, nutritious, and delicious brunch. Watch along and take notes for a fresh new take on an old-time favorite: the omelette. Everything tastes better when cooked outdoors but even better on the wood stove!

🍳Dr. Jenny's Favorite Camp Skillet Omelette Recipe 🍳
(serves 1)
1-2 tbsp extra virgin olive oil
2-4 eggs (as many as desired)
1/4 c diced onion
1 mini sweet bell pepper
1/4 c chopped zucchini
1/4 c chopped fresh spinach
1/4 c diced tomato
1/2 an avocado
1-2 tbsp goat cheese crumbles
2 tbsp hummus of choice
Seasonings:
1/4 tsp smoked paprika
1/4 tsp Trader Joe's Everything but the Elolte blend
1/4 tsp Trader Joe's AJIKA Georgian blend
1/4 tsp Trader Joe's UMAMI blend
1/4 tsp Trader Joe's 21 Seasoning Salute

Diretions:
1. Heat skillet & oil over medium heat.
2. Saute onions, zucchini, and peppers for 4-5 minutes until onions are translucent. Beat eggs while vegetables cook.
3. Pour eggs over vegetables.
4. Season eggs with smoked paprika, everything but the elote blend, AJIKA Georgian blend, UMAMI blend, and 21 seasoning salute.
5. Sprinkle chopped spinach & goat cheese crumbles over 1/2 the egg mixture in skillet.
6. Let eggs set for another 4-5 minutes over medium heat, then fold eggs over into 1/2. Eggs should no loner be runny. Let sit for 1 minute then flip onto other side for 1 minute.
7. Remove omelette from skillet to plate. Top with hummus, tomato, avacado, hot sauce.
8. Enjoy!

Optional add-ins: choose another protein of choice (ham, bacon, turkey, cold-smoked salmon), chickpeas, black beans, jalapeños, green chile salsa, hot sauce of choice.
