Brisket: The True Meaning of Barbecue | Bring The Smoke

I'm going to walk you through a brisket cook on my offset smoker. This is a smaller beef brisket that I am smoking with red oak. I will also be rendering down beef tallow along side of this and pouring some one top of the brisket just before I wrap it in butcher paper.

Dry Rub
50 grams kosher salt
80 grams black pepper
40 grams lawry's seasoning salt
