Ingredients Recap

- Eggplants: 4
- Potato starch: 5 tbsp
- Chili: 1
- Sweet pepper: 2
- Onion: 1
- Green onions: 1 bunch
- Coriander: 1 bunch
- Sesame seeds: 1 tbsp
- Soy sauce: 6 tbsp
- Rice vinegar : 3 tbsp
- Sugar: 2 tbsp
- Starch : 1 tbsp
- Garlic: 4 cloves
- Water: 70 ml
- Tomato paste: 1 tsp

Eggplant is a diuretic. Poor in sodium, rich in potassium (240mg / 100g) and water (92%), it purifies the body. Eggplant is recommended for inflammation of the urinary tract.
It is also a laxative. Its high fiber content (2.5%) softens digestive ailments, accelerates intestinal transit, and fights against constipation.
Eggplant is astringent.
The skin of the eggplant is also a source of antioxidants. These protect the body from free radicals and thus slow the onset of cardiovascular disease, cancer, and premature cell aging.
It also contains beta-carotene beneficial for vision and against aging of the skin.
Eggplant has anti-inflammatory properties that are effective against mosquito bites. To do this, apply dried eggplant powder to the affected area.
Eggplant stimulates gallbladder secretions and healthy liver function.
It is a source of iron, to fight against anemia. It also provides potassium in large quantities, magnesium, and vitamins in smaller quantities.
