Seafood Hobo Meal In the Desert | New Mexico Outdoor Cooking

A good portion of my life, I lived by the sea. We foraged the coast and made seafood hobo meals, and cooked them on the beach. They were delicious! Now I live in New Mexico, without access to the sea. I didn't let that stop me from enjoying a mouth watering seafood hobo meal while land locked the middle of a dessert.

The beauty of this recipe is you can have fun and experiment with different spices and selection in seafood. Here are the basic ingredients:

- Salt, Garlic Powder, Black Pepper, mixed herb seasoning mix and white cooking wine. Optional- Olive Oil, Cajun Seasoning, Lemon Pepper, Old Bay, etc.

- Small or New Potatoes, Fresh Chopped Garlic and Parsley, and French Bread

- Your choice of seafood: Mussels, Craw Fish, Clams, Crab (or artificial crab meat), Shrimp (peeled or unpeeled), Scallops.....etc all (Fresh or Precooked), Optional - add Sausage.
