INGREDIENTS :

500 grams cubed swede
400 grams minced beef
2 chopped onions
4 minced garlic cloves
10 grams minced ginger
3 chopped red chillies
1 egg
400 ml coconut milk
3 tablespoons soy sauce
2 lemon grass sticks
5 lime leaves
60 grams tamarind paste
2 tablespoons plain flour
2 teaspoons turmeric
250 ml coconut water
2 short crust pastry sheets
1 teaspoon vegetable oil
2 tablespoons water

INSTRUCTIONS :

.in frying pan add 1 teaspoon vegetable oil on medium heat
.add 400 grams minced beef, 2 chopped onions
.cook until beef is brown and onions are tender
.add 4 minced garlic cloves, 10 grams minced ginger
.add 3 chopped red chillies, 2 teaspoons turmeric
.add 2 lemongrass sticks, 5 lime leaves
.add 2 tablespoons water and stir well
.stir in 2 tablespoons plain flour
.add 250 ml coconut water, 400 ml coconut milk and stir well
.cover with lid and cook on simmer for 1 hour
.add 500 grams cubed swede and stir well
.add 60 grams tamarind paste and stir well
.cover with lid and cook for 20 minutes
.uncover and cook for 15 minutes until swede is soft
.add 3 tablespoons soy sauce and stir well
.remove from heat and leave to cool, remove lime leaves and lemon grass
.preheat oven 180 c / 356 f and roll out a short crust pastry sheet
.cut out medium size circles
.spoon filling into centre of each circle
.fold and seal the pastry
.make small hole on top of each pie
.place pies on baking tray lined with parchment paper and brush with beaten egg
.repeat process with 2nd short crust pastry sheet
.bake for 20 to 25 minutes until golden
.serve with lemon / lime slices & sweet chilli sauce
