Copycat Meat Church Armadillo Eggs on the Blackstone Griddle | Griddle Food Network

On this episode of the Griddle Food Network, Nick copycats one of his favorite Meat Church recipes, the Armadillo Eggs. Nick was even able to use the #EasyKabobMaker to fill the jalepenos with seasoned cream cheese. Normally the armadillo eggs are smoked. Nick show's you how to cook'em up on the blackstone griddle.

Easy Kabob Maker

Ingredients:
- Jalapenos
- 1 lb of bacon
- 1 lb of ground sausage
- 1 block of cream cheese
- Southwest Chipolte Seasoning (Dash)
- Hughes Sugar Free Original BBQ Sauce

1 hour before the cook, let cream cheese sit out and soften. Once softened, apply your choice of seasoning. Use a spatula and mix in the the seasoning with the cream cheese.

Fill your jalapenos with the seasoned cream cheese. I chose to use my Easy Kabob Maker to fill my jalapenos. Once your jalapenos are filled cover them with ground sausage encapsulating the jalapeno. Cut 2 small pieces of bacon to be your ends and then wrap your egg in bacon.

Place the armadillo eggs on baking rack that sits an at minimum 1/2 inch off the griddle and cover with a basting dome. Burners should be set to high heat. Let the armadillo eggs cook under cover for 12 minutes, then flip them and let them cook another 12 minutes. Once complete, turn burners to low and and baste the armadillo eggs in your choice of bbq sauce. Cover the armadillo eggs for an additional 10 minutes and let them carmelize.
