INGREDIENTS ( serves 2 ) :

DRESSING :
1 juiced medium lemon
2 tablespoons extra virgin olive oil
2 tablespoons honey
1/4 teaspoon all spice
1/4 teaspoon smoked paprika
1 minced garlic clove
1/4 teaspoon ground black pepper
1/8 teaspoon salt
2 tablespoons water

SALAD :
220 grams trout fillet
100 grams mixed salad
( lollo rosso, lollo bionda, oak leaf )
1/2 red onion thinly sliced
123 grams sliced & cubed cucumber
100 grams cubed feta cheese
45 grams thinly sliced beetroot

INSTRUCTIONS :

.in blender beaker add 1 juiced medium lemon, 2 tablespoons extra virgin olive oil
.add 2 tablespoons water, 2 tablespoons honey
.add 1/8 teaspoon salt, 1/4 teaspoon smoked paprika
.add 1/4 teaspoon all spice, 1/4 teaspoon ground black pepper
.add 1 minced garlic clove and blend until smooth
.drizzle some dressing on trout fillets
.cook in pre heated oven 180 c / 356 f for 20 minutes
.in a mixing bowl add 100 grams mixed salad ( lollo rosso, lollo bionda, oak leaf )
.add 123 grams sliced & cubed cucumber, 1/2 red onion thinly sliced
.add 45 grams thinly sliced beetroot, 100 grams cubed feta cheese
.mix together very well
.serve salad mix on a plate
.place trout on top and drizzle with dressing
