5 potatoes
2 sweet potatoes
Boil until it’s tender about 20 minutes
Add 1/3 cup olive oil
1 cup milk low fat or plant 🌱 milk
Then mash
In a pan add
Olive oil
1 onion
2 cups frozen peas 🫛
2 cups frozen carrots 🥕
Cook on low heat 10 minutes
Add 3 cups cooked green lentils
2 tbsp tomato 🍅 paste
400 ml vegetables broth
Cook another 5 minutes
In a baking pan add first the lentils mixture
Top it with the potatoes
Bake 200 C 20 minutes
Enjoy !
It’s little long but you can store in the fridge for days !
