Onion Fritters: https://blackstoneproducts.com/blogs/recipes/onion-fritters Ingredients Batter 1 egg ½ - ¾ cup buttermilk ¾ cup self-rising flour 3 tablespoons cornmeal 1 teaspoon paprika Dash of cayenne pepper 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon salt ¼ teaspoon pepper Sauce ½ cup mayonnaise 1 tablespoon horseradish sauce 1 tablespoon buttermilk ½ teaspoon garlic powder ½ teaspoon onion powder Dash of cayenne pepper ½ teaspoon paprika 2 teaspoons ketchup ½ tablespoon honey (or 1-2 teaspoons sugar as a substitute) Onions 1 cup avocado oil (for frying) 2-3 onions, thinly sliced on a mandolin 1 teaspoon salt (for seasoning the onions after cooking) Directions 1. Preheat your griddle on low and add avocado oil for frying. 2. In a bowl, whisk together all the batter ingredients (egg, buttermilk, self-rising flour, cornmeal, paprika, cayenne pepper, onion powder, garlic powder, salt, and pepper). 3. In a separate bowl, combine all the sauce ingredients (mayonnaise, horseradish sauce, buttermilk, garlic powder, onion powder, cayenne pepper, paprika, ketchup, and honey or sugar). Mix well and set aside. 4. Using a mandolin, slice the onions thinly. 5. Add the sliced onions to the batter and mix to coat evenly. Form small piles of the battered onions and carefully place them into the hot oil on the griddle. Cook until golden brown and crispy. 6. Once cooked, transfer the fried onions to a wire rack to cool and drain excess oil. Sprinkle with salt while still warm. 7. Serve the crispy onions with the dipping sauce and enjoy! Hot Honey Ranch Chicken Burgers: https://blackstoneproducts.com/blogs/recipes/hot-honey-ranch-chicken-burgers Ingredients 1 ½ lbs. ground chicken ¼ cup grated Parmesan cheese 2 tablespoons chopped parsley Blackstone Bootleg Burger Seasoning, to taste 8 slices Colby Jack cheese ¼ cup honey 2 tablespoons hot sauce (e.g., Cholula) 1 tablespoon red pepper flakes 4 ciabatta rolls, sliced Ranch dressing Bibb or butter lettuce Red onion, thinly sliced Tomato, thinly sliced Directions 1. In a large mixing bowl, combine the ground chicken, grated Parmesan, chopped parsley, and Blackstone Bootleg Burger Seasoning to taste. Mix until evenly combined. 2. Heat your Blackstone griddle to high and add a small amount of olive oil. 3. Divide the chicken mixture into 2-3 oz. portions and shape each portion into a meatball. Place each meatball onto the hot griddle, then flatten thinly using a burger smasher and a piece of parchment paper. 4. In a small bowl, mix together the honey, hot sauce, and red pepper flakes until well blended. 5. Toast the ciabatta buns on the griddle until golden. Flip the chicken patties once browned, and spoon some hot honey sauce over the cooked side of each patty. Place a slice of Colby Jack cheese on top. 6. Spread a drizzle of ranch dressing on the bottom half of each toasted bun. Add a layer of lettuce, then double stack the chicken patties on top.
